My Head’s In South Carolina: How To Make Hoppin’ John

How to make Hoppin' JohnGrowing up in the Cumberland Highlands of Eastern Kentucky, the Atlantic ocean seems a million miles away.

So it’s with a certain fever that I make my way to Litchfield Beach, South Carolina (immediately procuring a mauve Panama Jack shirt and custom made French Foreign Legion hat emblazoned: “Bod Squad” ) as a 16 year old lad eager to see the world.

Who Remembers Coffee Partner?

Coffee Partner

Once upon a time the grocery stores in New Orleans all had Coffee Partner on their shelves. If I recall, it was packaged pure ground chicory and was used to enhance the flavor of ordinary to below average coffee beans.

It has now disappeared. It’s no longer at Canseco’s, Rouse’s, Robert’s or any of our normal haunts.

A Deeper Understanding Of Joel Robuchon’s Mashed Potatoes

A Deeper Understanding Of Joel Robuchon’s Mashed Potatoes

When it comes to pommes purée, Joel Robuchon is king. Author Patricia Wells, speaking on the chef, said “He realized early on that if you give people potatoes, potatoes and more potatoes, they’ll be eternally grateful, forever fulfilled,”

Rest In Peace: John “Prince” Gilbert

John “Prince” Gilbert

We ran into John “Prince” Gilbert during Carnival season earlier this year in the Marigny neighborhood of New Orleans. The old saxophone legend broke ground back in the 90s with Rebirth Brass Band and has played with the titans of jazz for over 40 years.

The word legend gets thrown all over the place these days but Prince earned the right to be called just that.

He passed away last week.

Rest in peace king.

Let Me Teach You How To Make Texas Red Chili

When that cold nor’easter blew in from Lake Pontchartrain last night I got to thinking about chili.

Texas chili.

Texas Red to be precise.

I retired undefeated from the Texas chili wars over a decade ago. Back in the 90s, well before Top Chef became a thing, I organized a series of cooking competitions called Texas Top Cook. I would visit the best restaurants in Austin with an open letter to the cooks in the kitchen.
