Swans Down Flour. May 31st, 1886.

When I tell the story of a brand with a history as long and vivid as Swans Down flour the tale must begin with the people behind it, and just as importantly the development of the marque.

Swans Down branding leans on imagery of softness and purity: swan down evokes feathers, lightness, delicacy—qualities desirable in cake baking.

In my former life as a pastry chef I was elbows deep in Swans Down flour for years on end. It is the finest cake flour on the planet and has been since 1886 when the Igleheart clan launched their brand.

If you do not have deep institutional knowledge of the Iglehearts but are interested in the early days of their packaging efforts look upon Austin Smith Igleheart [1889 – 1979] as he was largely responsible for this segment of the family business. He knew the value of advertising and packaging and worked tirelessly to foment this view upon the brothers.

Smith-Igleheart oversaw the shift from commodity flour sacks to branded boxed retail packaging with specialized messaging and identity. The bruising battle for shelf space in grocers was on and the Iglehearts had their sleeves rolled up.

Baking season is upon us and I’m preparing to wade back into the pastry fray so here’s a brief look at the Swans Down marque over the decades since the Igleheart brothers began grinding wheat in southern Indiana lo those many years ago.
